Superior to the Central American variety, Jamaican allspice has higher moisture content with solid brown berries and no dust residue. Allspice grinds quite easily, if you only need a small amount it can also be crushed in a mortar and pestle. In an airtight container they will keep almost indefinitely.
In Jamaica allspice is an important ingredient in jerk seasoning pastes that are rubbed onto chicken, meat or fish before grilling. Allspice enhances the flavor of pineapple, plums, black currants, and apples. Wonderful in pilafs, curries, cakes and deserts.
