Tasmanian Leatherwood Honey

I love this honey but I can never describe it properly. All I can say is that it’s magical. It tastes like a potion that Harry Potter would make. Something mystical that does mysterious things to your taste buds. It’s sweet, with floral and eucalyptus undertones. And the top is always a little bit foamy. That’s the best I can do people! I’m telling you though; magical is a much better description.

Fossil records prove the records of the Leatherwood tree date back to around sixty five million years to the ancient southern mega continent Gondwana before it broke up into various parts, each of which took its own piece of the species. Most of these species have sadly gone extinct except for those in Australia and South America.

Leatherwood flowers abundantly each year beginning in early January through March.

We love this honey right off the spoon or with our mint tea.
