Maybe me. Posole (or Pozole) is dried corn that's been slaked, giving it a nutritional boost and making the ancient grain more digestible. Also known as hominy, Posole works in stews, as a side dish, in classic Mexican and southwestern dishes or even ground in a food processor to make grits.

Simply simmer with a chopped onion for about three hours after a good long soaking. Your homemade posole will have none of the rubbery texture and flavor of canned hominy but you can use it in your favorite recipes in exactly the same way.
