Also known as the true Cinnamon, this Rancho Gordo Canela (straight from Sri lanka) is a much softer, more astringent texture that will give a bit more of a rustic and woodsy flavor -making it perfect for savory dishes involving pork chops or lamb. Just promise us that you'll try it with a few cloves and some cider (and maybe a bit of whisky, too).
