He pairs this classic vinegar with sunflower oil for vinaigrettes; sunflower oil, not olive oil, was abundant in his hometown. Vongerichten uses Melfor to make a salad of tomato, gruyere and red onion. We also recommend it for deglazing pans after searing meat and for sauces.
