Grown organically by Antonio and Rosaria Cappelletti, who run a small family operation, La Valletta, they are dedicated to the preservation of plants native to the Colfiorito Plateau in Umbria.
Many varieties of lentils have long been grown in the uplands of Colfiorito. They are greatly influenced by their habitat as the distinctive taste and color of the lentils are derived both from the environment in which they are grown and from the techniques used to cultivate them.
Mix cooked La Valletta Umbrian Lentils from Colfiorito in with fresh farmers market vegetables and toss with olive oil to make a protein rich salad.
