The Gangi family has dedicated a portion of their organic 80-acre farm at the base of the Madonie Mountains to the production of Puanta oregano -an aromatic cross between marjoram and oregano known for its delicate flavor profile of sweet, spice and citrus notes. Harvested in September, the handpicked crop is laid on coarse fiber mats under canopies to allow for air circulation, tied in bouquet bunches and sealed in cellophane where it is crushed by hand.
Add to every tomato sauce or use it as a topping over pizza with dried capers.
