Likely a close descendant of the corn brought to Italy from the New World, Farina della Valsugana Polenta from Trentino has a sweet corn taste, and is flecked by bright crimson brown bits of corn bran. We adore it for sweet breakfast polenta or topped with rich pork or oxtail ragu.
