Produced from Chianti grapes in Impruneta, near Florence, Castello di Cafaggio Chianti Red Wine Vinegar is a straightforward vinegar with a clear and pungent taste and of a beautiful ruby red color. The Chianti grapes are aged in oak barrels for at least 6 months to impart the vinegar with a slight woodsy flavor. Our chefs love it for deglazzing pans and for elegant but simple vinaigrettes.

Castello di Cafaggio Chianti Red WIne Vinegar is produced from the fermentation of the Chianti DOCG grapes in oak casks for 6 months to a year; once the transformation has taken place, the vinegar is allowed to mature for another year, again in oak casks.


Castello di Cafaggio Chianti Red Wine Vinegar is perfect for agra dolce figs, deglazzing pans of roast chicken or duck, or used in vinaigrettes.
