Thanks to Giacomo Bologna -the man responsible for Piedmont’s Braida Winery-the Barbera grape skyrocketed in the 1960's after he proved that under the right conditions, Barbera could be one of the highest ranking wines in the world. By careful planting and aging the wine in small French barrique barrels (this helps give the otherwise low tannic wine a little oomph) he created a wine with an alarming depth of flavor and more complexity than this grape had ever produced.

Balsamic glazed Piedmontese beef with cipolini onions and garlic mash.
