Only 10lbs out of every ton of pepper qualify for the grade of Tellicherry peppercorns. Bigger and more aromatic that regular Tellicherry, this pepper is reserved for chefs who demand only the best.  The berries are picked when immature green, briefly fermented, and then dried.  The aroma is fruity and pungent with a warm, woody, lemony taste.
