It all begins in the small town of Visso in the Marche region of Italy. Natural spring water from the local national park of Sibillini is used to make the dough, which is slowly fermented for 24 hours, hand-stretched, then baked in wood-fired brick ovens.

It was once believed that truffles grew in spots where lightening struck because Truffle harvesters (called trifolau) are a secretive group that keeps their special truffle groves to themselves, often taking long winding paths at night or in the early morning fog to confuse those that would try to follow. The trifolau does have some help in this hunt, as the actual finding of the truffle is done by either a trained pig or by a mongrel dog (it is said pedigree dogs cannot smell truffles) with its superior sense of smell.

Our Black Truffle Pizza is made with black truffles, foraged by hand, and local mushrooms from the Marche region of Italy near our pizza factory, and then topped with whole milk Italian mozzarella. This is the pizza we are most proud of, the one that not only represents Italy the most, but the one you will need to hide to keep all to yourself. May we suggest a fog covered winding road?
