The San Matteo farm is set in Sicily amidst a splendid and extensive citrus grove that looks out over the sea at the gulf of Taormina and up to Mount Etna. Carlo Limone organically grows all the fruits and vegetables that go into his amazing line.

If you’ve ever cooked down or caramelized onions you know how much they shrink and how little you’re left with. I’m guessing a whole bushel went into this, surprisingly sweet, jam made with red onion, red wine, wine vinegar and raisins; the perfect accompaniment to roast meats, aged cheddars or a ham and cheese sandwich.
