Dr. Pescia Honey Apicoltura

Dr. Pescia is situated on Coastal Tuscany’s Etruscan Coast. Paolo Pescia is a second-generation artisan honey maker, intensely passionate about ecosystems and preserving the environment. Paolo practices “nomadic” beekeeping, transporting his beehives to seasonally flowering zones and protected national parks located from the Tuscan coast to its hills to produce monofloral honeys of stunning quality and flavor. All production is done by hand, including the scraping of the honey from their combs.

Corbezzolo Honey
Gathered from the rare strawberry tree in Italy this is a dark honey with an intense flavor. Considered a very rare honey because it’s produced during the autumn months, the time of the year typified by rainy days that are sometimes cold. The production can start during summer if there are the periodic downpours and afternoon storms that favor the precocious flowering of the Arbutus Unendo in the first half of October, a month in which the daylight hours are still relatively long and the temperature is pleasant. Great on toasted bread or in various baked goods, super good with a nice pecorino!
