“julie and julia” inspired olive oil crostini toast recipe, perfect for heirloom tomato bruschetta!

Inspired by “Julie and Julia,” the movie that made us oh so hungry, this Olive Oil Crostini Toast Recipe has 3 ingredients and is perfect for making heirloom tomato bruschetta, Roast Bone Marrow and Parsley Salad by Anthony Bourdains from the book “My Last Supper”, or as the base for our absolute favorite Sun Gold Tomato and Baby Artichoke Crostini with Fresh Ricotta Recipe.  Also try them as an accompaniment to your favorite kale soup or chicken stew. We love them in the summer with just a smashed, ripe tomato and a little salt. Perfection.

Prep Time 5 minutes

Cook Time 15 minutes

Total Time 20 minutes

Serves 4

Ingredients

  • 1 loaf good crusty Italian bread cut about 1/2 inch thick
  • 1 lightly fruity Extra Virgin Olive Oil
  • 2 large cloves peeled garlic

Directions

  1. Slice the crusty Italian bread about ½ inch thick.
  2. Depending on your recipe, count on 2 slices of bread per person.
  3. Over medium heat, coat the bottom of a pan large enough to fit your bread in one layer with a good, lightly fruity extra virgin olive oil, you will need more than you think so do a good coating.
  4. Push the bread into the oiled pan.
  5. Drizzle more oil over the top of the slices and then flip so that the side completely coated is facing up.
  6. Keep the heat to medium and toast the bread until crispy. You will need to flip the bread and move the pieces around to ensure even cooking.
  7. Once the slices are golden brown, remove to a cutting board and rub the top with the peeled garlic clove. This will give it a nice garlic flavor.


Use the toast immediatly for crostini, bruschetta, or pair with minestrone, stew, or spaghetti and meatballs.
