the wine dude abides. meet david.

Hello Everybody,
.
My name is David. I’m that guy at Cube who always says, “Well, I’m not actually your server, and even though I would love to talk to you about cheese and food, technically, I’m the ‘The Wine Dude’.”
.
I suppose this letter is an introduction to myself and the retail wine list we are debuting on the website.   The wine list is 100% Italian.  I’m 100% Texan. (I say “Y’all.”)  But the most important thing I want to you know about myself and this list, is that we are both here to help you enjoy Italian wine.
.
I have been immersed in strictly Italian wine at Cube for almost two years.  I’ve been in and out of the restaurant industry since I was 17 years old at various fine, and not so fine, dining establishments.  And I truly believe the primary function of food and wine, other than sustenance, is to provide an opportunity for us to enjoy each other.  I love that food gives us a reason to gather with friends and family.    I grew up in a household that ate dinner together every night.  No TV, no cell phones, just my family talking about what we did that day.  For me, the best days are the ones filled with food, family, and friends.

The development of Cube’s wine list stemmed from this emphasis on togetherness.   Our owner, Alex Palermo, is Italian.  He loves Italian wine.  I love Italian wine.  We love Italian wine because it tells a story of the place and the people where it started.   The wine we carry was made to reflect the place where it was grown.  As the son of a long time cotton farmer (told you I was from Texas), I respect this philosophy.  I like that these wines mirror the specific land and people where they originated.  After all, in essence, wine makers are really just sophisticated grape farmers.

For this reason, there is one aspect of the food and wine culture that I can’t stand.  I can’t stand the exclusivity and sense of entitlement that pervades wine circles.  (I mean who’s ever heard of a stuck-up grape farmer?)  I find it silly that some wine people would judge, or dare I say scoff, at customers for not knowing the difference between an Aglianico from Vulture and one from Taburno.  You won’t find that at Cube.  I’m here to help.  So, I’m opening myself up through this website to any and all questions you have about the wine we carry with the single goal of finding a wine you enjoy.  Italian wine can be complicated, especially our list.  But that is because we carry boutique wine made with love from every nook and cranny of Italy.
