I have a confession.  I’ve gone a wee bit rice pudding crazy this week.  I’ve made vanilla rice pudding, fresh strawberry rice pudding, dark chocolate rice pudding with fresh whipped cream, blueberry bottom rice pudding, amarene cherry rice pudding, caramel rice pudding, wildflower honey rice pudding and coconut rice pudding with mangos and sesame seeds.  I just couldn’t stop.

The flavor combinations are endless!  I’m already thinking I could make an orange rice pudding that would taste like a Dreamsicle.  Or one with caramel apples and a little pie crust top like tart tatin.  Seriously, I’m sick and I must be stopped.

I’ll be posting all these recipes in the days to come, but to start:  Vanilla Bean Arborio Rice Pudding.  Here’s why this is awesome:  it’s easy peasy, it uses only 5 ingredients, it serves 6 people, it’s the amazing base for countless flavor combinations.

Vanilla Bean Arborio Rice Pudding

1/2 cup organic arborio risotto rice
3 cups organic heavy cream
1 cup water
1/4 cup sugar
1 vanilla bean, split in half, seeds scraped out
pinch salt
.
1/2 chopped roasted and salted almonds for garnish, optional
.
In a large saucepan or dutch oven, combine all the ingredients above and bring them to a boil over medium heat stirring consistently. Gentely cook over low heat for 45 minutes until rice is coked but still ardent.
Remove from heat, divined into 6 dishes and refrigerate.  Serve with chopped almonds and whipped cream.

    The blueberry on the bottom arborio rice pudding looks awesome. Looks like a yummy Mother’s Day dinner dessert.
