One of the best and easiest ways to enjoy tender, fresh spring asparagus. Fresh Asparagus with Soft Fried Eggs and Parmesan Cheese can be made in 5 minutes and is easy and healthy. As with most simple rustic dishes, there are only a few ingredients so make sure you buy tender, local asparagus at the peak of the season. Make sure your asparagus spears have tight heads and choose spears that were grown as close to you as possible, it will lose sweetness as soon as it’s picked. Check that the ends are not dry and white, if they are, chances are it’s old asparagus and will be bitter and woody. For the eggs, choose extra large, organic, free range eggs. Use a good fruity extra virgin olive oil, like Les Moulins Mahjoub Organic Extra Virgin Olive Oil from Tunisia. This dish makes an excellent light summer supper or lunch.
Fresh asparagus with soft fried eggs and parmesan cheese

Serves 1-2 people
Ingredients
- 1 bunch fresh asparagus, woody ends trimmed
- 1 Tbsp. extra virgin olive oil
- the juice of 1/2 a lemon
- fresh grated Parmesan cheese
- 2 fresh, organic eggs
- salt to taste
- fresh cracked black pepper
Directions
You will need a cast iron skillet for this recipe.
- Heat your cast iron skillet over medium heat, add the olive oil.
- Once the oil is glistening, add the asparagus. Do not crowd.
- Cook the asparagus about 3 minutes on each side, flipping over with tongs.
- Cook the asparagus until tender, but still crisp.
- Remove from skillet and arrange on a platter.
- Squeeze the lemon over the spears and sprinkle with a little salt.
- Crack the eggs into the cast iron skillet and fry until the white is set and the yolk is still runny.
- Remove the eggs and place them over the warm asparagus.
- Sprinkle with freshly grated parmesan and fresh cracked black pepper.
Enjoy immediately.
